Portez la cr\u00e8me et le lait \u00e0 \u00e9bullition avec la poudre de lait et le sucre inverti.<\/li>\n<li style=\"text-align: justify;\">Dans la cuve d\u2019un batteur muni du fouet, faites blanchir les jaunes d\u2019\u0153ufs avec le sucre.<\/li>\n<li style=\"text-align: justify;\">Versez un peu de cr\u00e8me chaude sur l\u2019appareil pour le mettre \u00e0 temp\u00e9rature.<\/li>\n<li style=\"text-align: justify;\">Ajoutez le reste et m\u00e9langez.<\/li>\n<li style=\"text-align: justify;\">D\u00e9barrassez le tout dans une casserole et portez \u00e0 la nappe, c\u2019est-\u00e0-dire \u00e0 82\u00a0\u00b0C.<\/li>\n<li style=\"text-align: justify;\">Versez sur le chocolat et passez le mixeur plongeant.<\/li>\n<li style=\"text-align: justify;\">Laissez refroidir une nuit au r\u00e9frig\u00e9rateur.<\/li>\n<li style=\"text-align: justify;\">Le lendemain, passez l\u2019appareil \u00e0 la turbine pour obtenir une glace.<\/li>\n<\/ul>\n<h1 style=\"text-align: justify;\"><span style=\"color: #ff6600;\">Fenouils confits<\/span><\/h1>\n<ul>\n<li style=\"text-align: justify;\">Faites blanchir les fenouils coup\u00e9s en deux quelques secondes dans de l\u2019eau bouillante sal\u00e9e.<\/li>\n<li style=\"text-align: justify;\">R\u00e9alisez un sirop avec l\u2019eau et 300 g de sucre.
