Malheureusement pour nous, l\u2019image de sa cuisine est, la plupart du temps r\u00e9duite \u00e0 ses expressions les plus simples et consensuelles\u00a0: le couscous et les tajines. De son ouverture vers le monde, d\u2019un c\u00f4t\u00e9 l\u2019Afrique profonde, et les Hommes Bleus qui remontaient jusqu\u2019aux confins de l\u2019Atlas pour vendre le sel et les \u00e9pices. Et la fa\u00e7ade m\u00e9diterran\u00e9enne, le c\u00f4t\u00e9 Mare Nostrum, et ses influences orientales.\u00a0 Et puis, le Maroc, c\u2019est aussi le m\u00e9lange des cultures Berb\u00e8res et Arabo-islamique, les invasions europ\u00e9ennes, les Portugais d\u2019abord, les Fran\u00e7ais ensuite. Les salades. Il ne s\u2019agit pas de salade au sens o\u00f9 nous l\u2019entendons g\u00e9n\u00e9ralement, pas de feuilles vertes ou si peu, pas de vinaigre et encore moins de balsamique. <strong>Les salades marocaines sont \u00ab\u00a0douces\u00a0\u00bb, avec des notes sucr\u00e9es, ou \u00e9pic\u00e9es,<\/strong> voire fruit\u00e9es pour couper la piquant d\u2019un accompagnement. Alors, autant leur fournir du <strong>vin local.<\/strong> Le probl\u00e8me \u00e9tant que le go\u00fbt des dits touristes s\u2019affine. Et que les Boulaouane ros\u00e9s, et autres vins du genre, ne\u00a0 constituent pas des produits d\u2019avenir et surtout peut-\u00eatre, de marges importantes. L\u2019accent est donc mis par les producteurs, sur des vins de qualit\u00e9, des plantations nouvelles, des r\u00e9gions nouvelles, pour tirer le niveau global des vins locaux d\u2019honn\u00eate \u00e0 vachement bon. Dans les restaurants bon chic bon genre des grandes villes, touristiques ou non, on trouve de plus en plus de r\u00e9f\u00e9rences locales.
