Mais lorsqu\u2019un lieu s\u2019est lib\u00e9r\u00e9 \u00e0 Ixelles, dans un quartier qu\u2019il affectionne (rue Franz Merjay, 165), le chef a saisi l\u2019occasion de concr\u00e9tiser une envie de plus en plus grande depuis quelques ann\u00e9es. Celle de retourner \u00e0 ses premi\u00e8res amours, en cr\u00e9ant une structure plus simple et l\u00e9g\u00e8re, comme \u00e0 l\u2019\u00e9poque du Bistrot du Mail. Le concept du restaurant Amen \u2013 c\u2019est son nom, non pour le c\u00f4t\u00e9 religieux mais pour le cri du coeur, la joie positive, l\u2019affranchissement des r\u00e9f\u00e9rences fa\u00e7on \u2018ainsi soit-il\u2019 \u2013 est n\u00e9 dans deux t\u00eates, celles du chef et de sa compagne qui en assure la direction artistique avec le Bruxellois Herv\u00e9 Yvrenogeau, designer chez Acne Studios \u00e0 Stockholm et ancien professeur \u00e0 La Cambre Mode(s). \u00ab\u00a0Ce resto, c\u2019est chez moi. Une invitation \u00e0 glisser les pieds sous ma table, sans formatage, sans codes, authentique, un lieu de retrouvailles entre copains\u00a0\u00bb, dit-il. \u00ab\u00a0C\u2019est qui nous sommes qui prend forme dans ce resto, de ce fait raffin\u00e9 mais pas guind\u00e9 \u00bb, dit-elle.<\/p>\n<p style=\"text-align: justify;\">A la carte\u00a0? \u00ab\u00a0Du local, de l\u2019artisanal, du r\u00e9el, des m\u00e9langes du Sud, des connotations m\u00e9diterran\u00e9ennes, des plats qui sentent le soleil et les vacances.\u00a0\u00bb \u00ab\u00a0Je ne sais faire qu\u2019une cuisine, reprend Pascal Devalkeneer, celle que j\u2019ai envie de manger.
