Entre \u00e9toiles et jolis galons, ce notoire chef belge se voit ainsi r\u00e9compens\u00e9 sur le plan international pour la qualit\u00e9 de son travail doubl\u00e9 de cette passion inalt\u00e9rable qui jalonne les vingt ans d\u2019une carri\u00e8re particuli\u00e8rement embl\u00e9matique.<\/p>\n<p style=\"text-align: justify;\">Deux d\u00e9cennies \u00e0 travers lesquelles, celui que l\u2019on appelle plus commun\u00e9ment \u00ab\u00a0San\u00a0\u00bb, a toujours tenu \u00e0 d\u00e9fendre une philosophie attentive au terroir local saisonnier (son vaste jardin-potager procurant 90 % des produits entrant dans la composition de sa cuisine) et \u00e0 l\u2019\u00e9quilibre d\u2019une assiette contemporaine cr\u00e9ative et audacieuse, raffin\u00e9e et d\u00e9licate. Son embl\u00e8me, un coq sur la table du Grand V\u00e9four (Paris), a \u00e9t\u00e9 cr\u00e9\u00e9 par Jean Cocteau auquel on attribue cette sorte de leitmotiv de l\u2019association\u00a0: \u00ab\u00a0La tradition est un mouvement perp\u00e9tuel.
