C\u2019est vous le chef !<\/p>\n<ol>\n<li>Taillez en d\u00e9s ou en rondelles, <strong>1 aubergine, 1 courgette, quelques tomates anciennes.<\/strong><\/li>\n<li>Disposez les l\u00e9gumes dans une grande terrine (ou tajine), ajoutez des <strong>gousses d\u2019ail<\/strong> en chemise, <strong>3 ou 4 \u00e9chalotes<\/strong> coup\u00e9es en deux. Par dessus, d\u00e9posez des branchettes <strong>d\u2019herbes aromatiques<\/strong> que vous aimez (thym, romarin, laurier, au choix ou combin\u00e9).<\/li>\n<li>Arrosez <strong>d\u2019huile d\u2019olive.<\/strong><\/li>\n<li>Laissez cuire \u00e0 couvert, au four, \u00e0 basse temp\u00e9rature, pendant 2h30 environ pour que les l\u00e9gumes soient fondants, presque confits\u2026<\/li>\n<li>Pensez \u00e0 m\u00e9langer de temps en temps et ajoutez un peu d\u2019eau si n\u00e9cessaire. Une fois pr\u00eat, vous pouvez ajouter une petite pinc\u00e9e de gros sel de Gu\u00e9rande et du poivre.<\/li>\n<li>R\u00e9servez avec le couvercle pendant que vous pr\u00e9parez le poisson afin que la compot\u00e9e reste bien chaude (mais pas trop pour la d\u00e9guster).<\/li>\n<li>Faites mariner les pav\u00e9s de saumon (bio ou sauvage) dans de la sauce soja 20 minutes avant cuisson. Ensuite, faites chauffer votre po\u00eale antiadh\u00e9sive, sans ajout de mati\u00e8re grasse, mettez-y le poisson c\u00f4t\u00e9 peau. Laissez griller 2 \u00e0 3 minutes, ensuite couvrez pendant 3 \u00e0 4 minutes pour que le poisson cuise \u00e0 c\u0153ur sans devenir sec. En fin de cuisson, retournez le juste pour faire dorer les autres c\u00f4t\u00e9s en le saisissant tr\u00e8s rapidement.<\/li>\n<li>Servez le tout sur assiette, et couvrez les l\u00e9gumes de quelques feuilles de roquette pour d\u00e9corer. Le clin d\u2019\u0153il du chef\u00a0? Posez le saumon sur un graffiti de cr\u00e8me de balsamique ou quelques rondelles de citron pour un effet plus \u00ab\u00a0gastronomique\u00a0\u00bb\u00a0!
