L\u00e0, sont \u00e9galement assur\u00e9es des consultations de kin\u00e9sith\u00e9rapie mais aussi des ateliers culinaires pour enfants et adultes.<\/p>\n<h3 style=\"text-align: justify;\">D\u2019apr\u00e8s vous et les nombreux patients que vous rencontrez \u00e0 <em>Dietconsult<\/em>, l\u2019alimentation v\u00e9g\u00e9tarienne, voire v\u00e9g\u00e9talienne est-elle une mode ou une n\u00e9cessit\u00e9 contemporaine\u00a0?<\/h3>\n<p style=\"text-align: justify;\">Ce n\u2019est ni une mode ni une n\u00e9cessit\u00e9 mais plut\u00f4t une r\u00e9action du consommateur vis-\u00e0-vis d\u2019une industrie agro-alimentaire jug\u00e9e d\u00e9raisonn\u00e9e et focalis\u00e9e sur le profit. En parall\u00e8le, la tonalit\u00e9 m\u00e9diatique \u00e9volue, cherchant de plus en plus \u00e0 atteindre l\u2019\u00e9motionnel du consommateur envers la cause animale et le respect de l\u2019\u00e9quilibre de l\u2019offre alimentaire plan\u00e9taire. Deux \u00e9l\u00e9ments conjugu\u00e9s qui me sont fr\u00e9quemment relay\u00e9s en consultation avant m\u00eame la question de la sant\u00e9 individuelle. Il n\u2019est pas n\u00e9cessaire de devenir v\u00e9g\u00e9tarien (et s\u00fbrement pas v\u00e9g\u00e9talien) pour entretenir une bonne sant\u00e9. Par contre, la population belge devrait consommer moins de viande rouge et de charcuteries grasses et plus de prot\u00e9ines v\u00e9g\u00e9tales de type l\u00e9gumes secs ou substituts de viandes v\u00e9g\u00e9taux. D\u2019un point de vue de la sant\u00e9, j\u2019encourage plut\u00f4t le \u00ab\u00a0flexitarisme\u00a0\u00bb ou \u00ab\u00a0semi-v\u00e9g\u00e9tarisme\u00a0\u00bb, ce compromis me semble optimal.<\/p>\n<h3 style=\"text-align: justify;\">Quels sont les bienfaits d\u2019une alimentation veggie ou vegan pour la sant\u00e9, mais aussi les risques et dangers que vous avez constat\u00e9 chez vos patients\u00a0?<\/h3>\n<p style=\"text-align: justify;\">La plupart des patients \u00e9mettent en premier lieu une de crainte vis-\u00e0-vis d\u2019\u00e9ventuelles carences alimentaires. Dans la majorit\u00e9 des cas, apr\u00e8s une information recadr\u00e9e et compl\u00e8te ils s\u2019aper\u00e7oivent que leurs connaissances sur le sujet ne sont pas assez pr\u00e9cises. En synth\u00e8se, une alimentation plus v\u00e9g\u00e9tale est b\u00e9n\u00e9fique pour la sant\u00e9 cardio-vasculaire, la pr\u00e9vention du diab\u00e8te et de certains cancers mais elle peut contenir des risques. Une alimentation v\u00e9g\u00e9tarienne d\u00e9s\u00e9quilibr\u00e9e peut conduire \u00e0 des manques (voire des carences) de prot\u00e9ines de haute valeur biologique, de fer et de vitamine B12 (fatigue, an\u00e9mie, troubles nerveux\u2026). Dans le cas du v\u00e9g\u00e9talisme, une suppl\u00e9mentation en fer, calcium et vitamine B12 est indispensable.<\/p>\n<h3 style=\"text-align: justify;\">Quels conseils donneriez-vous \u00e0 ceux qui veulent devenir v\u00e9g\u00e9tariens, v\u00e9g\u00e9taliens ou m\u00eame aux consommateurs de produits bio\u00a0?<\/h3>\n<p style=\"text-align: justify;\">Pour couvrir ses besoins nutritionnels, un v\u00e9g\u00e9tarien devra se tourner vers les prot\u00e9ines de l\u2019\u0153uf, du soja, du bl\u00e9, les mycoprot\u00e9ines, les produits laitiers (riches en B12) et les l\u00e9gumes secs. Il consommera \u00e9galement des c\u00e9r\u00e9ales compl\u00e8tes, des graines et des l\u00e9gumes \u00e0 feuilles vert fonc\u00e9 pour leurs apports en fer. Je conseille syst\u00e9matiquement aux v\u00e9g\u00e9tariens d\u2019arroser leurs aliments de jus de citron ou de manger un fruit aux alentours du repas car la vitamine C favorise l\u2019assimilation du fer provenant d\u2019aliments v\u00e9g\u00e9taux.<\/p>\n<p style=\"text-align: center;\"><strong>Envie d&rsquo;inspiration?
