Depuis, cette amoureuse de la terre n\u2019a de cesse de partager sa passion pour la terre et son savoir-faire \u00e0 travers des conf\u00e9rences et autres formations ou ateliers culinaires.<\/p>\n<p style=\"text-align: right;\"><em>Par Jo\u00eblle Rochette<\/em><\/p>\n<h2 style=\"text-align: justify;\"><strong>A table avec\u00a0Val\u00e9rie Mostert <\/strong><\/h2>\n<p style=\"text-align: justify;\">Val\u00e9rie Mostert a re\u00e7u le titre de \u00ab\u00a0Person of the Year 2017\u00a0\u00bb pour son travail de valorisation du terroir et de la cuisine naturelle, par \u00ab\u00a0We\u2019re Smart World Benelux\u00a0\u00bb et le Gault&amp;Millau Vert. A l&rsquo;automne dernier, elle publiait son troisi\u00e8me livre aux Editions Racine\u00a0: Les l\u00e9gumes de la terre. Rencontre.<\/p>\n<h3 style=\"text-align: justify;\"><strong>Comment d\u00e9finissez-vous la permaculture et le flexitarisme et, d\u00e8s lors, comment est n\u00e9 ce vaste projet qui vous occupe aujourd\u2019hui\u00a0?<\/strong><\/h3>\n<p>La permaculture est un mode d\u2019agriculture durable et permanent qui englobe le potager et tout ce qui l\u2019entoure. Un \u00e9cosyst\u00e8me naturel en parfaite symbiose, permettant ainsi de ne pas faire appel \u00e0 des \u00e9l\u00e9ments ext\u00e9rieurs (engrais chimiques, etc.).<\/p>\n<p>Le flexitarisme est, \u00e0 mon sens, le choix d\u2019un mode de vie plus saine. Il associe\u00a0: la conscience \u00e9cologique (respect de la nature et utilisation intelligente de ce qu\u2019elle nous procure), la passion des l\u00e9gumes et le choix clairement r\u00e9fl\u00e9chi des produits alimentaires carn\u00e9s. Tout b\u00e9n\u00e9fice pour l\u2019environnement, la sant\u00e9 et m\u00eame pour le portefeuille\u00a0!<\/p>\n<p>Mes voyages m\u2019ont permis de d\u00e9couvrir la tr\u00e8s grande diversit\u00e9 du r\u00e8gne v\u00e9g\u00e9tal \u00e0 travers le monde, comment travailler la nature au quotidien, que faire des multiples l\u00e9gumes que la terre nous procure. Je suis revenue en Belgique avec l\u2019id\u00e9e de travailler dans la nature, de cr\u00e9er mon propre jardin-potager et d\u2019y mettre en valeur la biodiversit\u00e9 qui nous entoure mais aussi des l\u00e9gumes venus d\u2019ailleurs que l\u2019on parvient tr\u00e8s bien \u00e0 cultiver chez nous.<\/p>\n<h3><strong>Quel est votre avis face \u00e0 notre soci\u00e9t\u00e9 de surconsommation et aux d\u00e9rives de l\u2019agro-alimentaire\u00a0?<\/strong><\/h3>\n<p>Depuis une dizaine d\u2019ann\u00e9es, les gens prennent de plus en plus conscience de ces d\u00e9rives, surtout sur le plan \u00e9thique. Il faut veiller \u00e0 \u00e9duquer les gens, les enfants surtout, d\u00e8s l\u2019\u00e9cole. Il faut les informer, leur apprendre ce qui est bon et \u00e9thique\u00a0; c\u2019est aussi \u00e0 chacun \u00e0 faire ses choix, en allant faire ses courses, par exemple. Et ce n\u2019est pas le politique qui va le faire pour nous\u00a0! Il faut \u00eatre curieux, se renseigner, et par exemple \u00eatre attentif \u00e0 des mouvements tels que celui de Slow Food. A la rentr\u00e9e et dans ce cadre, je donnerai des conf\u00e9rences dans une \u00e9cole secondaire afin de mieux \u00e9clairer les ados sur leur mode d\u2019alimentation.<\/p>\n<h3><strong>Quels conseils donnez-vous aux personnes souhaitant devenir v\u00e9g\u00e9tariennes et\/ou cr\u00e9er leur propre jardin-potager\u00a0?<\/strong><\/h3>\n<p>Ne pas foncer t\u00eate baiss\u00e9e et se renseigner sur ce qu\u2019est une assiette \u00e9quilibr\u00e9e. Je conseillerais d\u2019aller voir un nutritionniste afin d\u2019\u00e9viter les carences et de se cr\u00e9er une alimentation \u00e0 la fois go\u00fbteuse, \u00e9quilibr\u00e9e et \u00e9thique. Quant au potager, il ne faut pas voir trop grand au d\u00e9part\u00a0: d\u00e9buter par un petit coin de plantes vivaces, qui poussent facilement chez nous. Ensuite pr\u00e9voir un bon compost, veiller \u00e0 avoir une terre de qualit\u00e9 et acheter des graines locales bio, 100\u00a0% naturelles. Pour ceci comme pour tout, cela d\u00e9pend du temps dont on dispose.<\/p>\n<p style=\"text-align: center;\"><strong>Envie d&rsquo;inspiration?
