Une entr\u00e9e saine, savoureuse et color\u00e9e !<\/p>\n<h3><strong>Ingr\u00e9dients<\/strong> (4 personnes)<\/h3>\n<p><strong>Tartare<\/strong><\/p>\n<ul>\n<li>400 g de betterave rouge pr\u00e9cuite<\/li>\n<li>20 g de pistaches d\u00e9cortiqu\u00e9es<\/li>\n<li>3 mesures d\u2018huile d\u2019olive<\/li>\n<li>le zeste et le jus d\u2019un citron<\/li>\n<li>sel marin<\/li>\n<\/ul>\n<p><strong>Cerises<\/strong><\/p>\n<ul>\n<li>250 g de cerises<\/li>\n<li>2 mesures d\u2019huile d\u2019olive<\/li>\n<li>1 trait de vin blanc<\/li>\n<\/ul>\n<p><strong>Cr\u00e8me glac\u00e9e<\/strong><\/p>\n<ul>\n<li>250 g de fromage blanc frais (plac\u00e9 au surg\u00e9lateur deux \u00e0 trois jours avant la pr\u00e9paration)<\/li>\n<\/ul>\n<p><strong>Pr\u00e9paration<\/strong><\/p>\n<ol>\n<li><strong>Tartare<\/strong>\u00a0: hachez finement les betteraves rouges et les pistaches. M\u00e9langez-les et ajoutez-y une pinc\u00e9e de sel marin, de l\u2019huile d\u2019olive, le zeste d\u2019un demi-citron et quelques gouttes de jus de citron.<\/li>\n<li><strong>Cerises\u00a0<\/strong>: coupez les cerises en deux. Faites chauffer l\u2019huile d\u2018olive dans une po\u00eale. Posez-y les cerises et cuisez-les bri\u00e8vement. D\u00e9glacez d\u2019un trait de vin blanc et laissez la cuisson se poursuivre un peu. Retirez du feu.<\/li>\n<li><strong>Cr\u00e8me glac\u00e9e<\/strong>\u00a0: mettez le fromage blanc surgel\u00e9 dans un mixer. Mixez jusqu\u2019\u00e0 l\u2019obtention d\u2019une poudre.<\/li>\n<li><strong>Finition<\/strong>\u00a0: servez le tartare sur les assiettes, r\u00e9partissez-y les cerises et d\u00e9corez de poudre de fromage blanc.
