De nouvelles histoires peuvent s\u2019\u00e9crire.<b> <\/b><\/div>\n<div style=\"text-align: right;\"><em><a href=\"http:\/\/www.sh-opeditions.com\/\">Par Ren\u00e9 Sepul, sh-op editions<\/a><\/em><\/div>\n<div style=\"text-align: right;\"><\/div>\n<div style=\"text-align: justify;\"><strong>Le Hertog Jan, le restaurant trois \u00e9toiles du grand chef Gert De Mangeleer et du sommelier Joachim Boudens, fermera ses portes<\/strong> apr\u00e8s treize belles ann\u00e9es de succ\u00e8s. Le chef et le sommelier souhaitent aujourd\u2019hui arr\u00eater au sommet. De nouveaux projets sont annonc\u00e9s. Gert, Joachim et toute l\u2019\u00e9quipe du Hertog Jan accueilleront leurs derniers clients le samedi 22\u00a0d\u00e9cembre\u00a02018.<u><\/u><u><\/u><\/div>\n<div style=\"text-align: justify;\"><\/div>\n<h2 style=\"text-align: justify;\">Less is more<\/h2>\n<div style=\"text-align: justify;\"><\/div>\n<div style=\"text-align: justify;\">Ils l\u2019avaient r\u00eav\u00e9, ils les ont eus\u00a0: leur propre \u00e9tablissement, puis une \u00e9toile. Puis un trois \u00e9toiles et un restaurant de renomm\u00e9e internationale. <u><\/u><u><\/u><\/div>\n<div style=\"text-align: justify;\">La fin du Hertog Jan ne signifie pas la fin d\u2019une carri\u00e8re, annonce le duo. Il s\u2019agit plut\u00f4t d\u2019une nouvelle histoire \u00e0 \u00e9crire et de nouveaux projets autour de bistro concept L.E.S.S. (Love. Eat. Share. Smile.). Dans une ambiance chaleureuse, L.E.S.S. propose des plats plus familiaux et plus accessibles. Pour leur pr\u00e9paration, Gert puise son inspiration aux quatre coins de la plan\u00e8te, depuis le boudin blanc flamand jusqu\u2019\u00e0 la fideu\u00e0 espagnole, en passant par le dim sum de Hong Kong. La plupart des plats servis sont destin\u00e9s \u00e0 \u00eatre partag\u00e9s. Dans sa s\u00e9lection de vins et de bi\u00e8res propos\u00e9e aux clients de L.E.S.S., Joachim a quitt\u00e9 les sentiers battus et pr\u00e9sente de nouvelles d\u00e9couvertes du monde entier. L.E.S.S. by Hertog Jan est un concept que Gert et Joachim continueront de d\u00e9velopper et dans le cadre duquel ils donneront aussi leur chance \u00e0 des jeunes en qui ils croient.<u><\/u><u><\/u><\/div>\n<div style=\"text-align: justify;\"><\/div>\n<div style=\"text-align: justify;\">Par ailleurs, ils ne disent pas adieu \u00e0 la grande gastronomie. Gert et Joachim pensent pouvoir d\u00e9passer leur niveau et r\u00eavent \u00e0 nouveau d\u2019un endroit o\u00f9 ils pourront encore, de temps en temps, donner le meilleur d\u2019eux-m\u00eames. Sous le nom de M.O.R.E. by Hertog Jan, ils continueront d\u2019imaginer et de donner vie \u00e0 des histoires gastronomiques passionnantes. Il n\u2019emp\u00eache, cette fermeture remet une fois en cause les fondements de la haute gastronomie et les exigences que celle-ci r\u00e9clame au quotidien. On se dit que ces deux-l\u00e0, rencontr\u00e9s une premi\u00e8re fois il y a dix ans, vont pouvoir souffler. Enfin, et tant mieux pour eux et pour beaucoup\u00a0: Hertog Jan \u00e9tait devenu comme inaccessible pour beaucoup de bourses. \u00ab\u00a0Nous souhaitons \u00e0 pr\u00e9sent profiter de petits bonheurs\u00a0: aller chercher les enfants \u00e0 l\u2019\u00e9cole, se r\u00e9unir tous ensemble le soir autour du repas, avoir plus de temps pour jouer au tennis\u2026 Nous aspirons \u00e0 un emploi du temps flexible et \u00e0 une organisation diff\u00e9rente de notre travail\u00a0\u00bb, conclut le communiqu\u00e9.
