Bien plus qu&rsquo;un livre de recettes, c&rsquo;est un hommage \u00e0 la cuisine des ann\u00e9es 50 \u2013 et le t\u00e9moignage d&rsquo;une admiration r\u00e9ciproque entre un grand cuisinier, Raymond Oliver (chef du Grand V\u00e9four, c\u00e9l\u00e8bre restaurant du quartier du Palais Royal \u00e0 Paris ) et le po\u00e8te Cocteau, son voisin et client r\u00e9gulier.<\/div>\n<div style=\"text-align: right;\"><a href=\"http:\/\/www.sh-opeditions.com\/\" target=\"_blank\" rel=\"noopener noreferrer\"><em>Par Ren\u00e9 Sepul, sh-op editions<\/em><\/a><\/div>\n<div><\/div>\n<h2>Un grimoire pour les amoureux de la cuisine<\/h2>\n<div><\/div>\n<div style=\"text-align: justify;\">L\u2019ouvrage fut \u00e9dit\u00e9 une premi\u00e8re fois en 1964. Cette \u00e9dition sublimissime, aujourd\u2019hui introuvable, \u00e9tait alors imprim\u00e9e sur des torchons de cuisine par la Galerie Jean Giraudoux. L\u2019\u00e9dition nouvelle, disponible depuis quelques jours, est \u00e9galement superbe. Ecrit par Oliver, le livre t\u00e9moigne \u00e9trangement de l\u2019admiration mutuelle et sinc\u00e8re que se portaient l\u2019un pour l\u2019autre le po\u00e8te et le chef. On y d\u00e9couvre une soixantaine de recettes, tr\u00e8s bien \u00e9crites, proches du conte et du po\u00e8me. Le po\u00e8te, parfois accompagn\u00e9 \u00e0 table de Colette, n\u2019\u00e9tait pas le plus simple \u00e0 satisfaire, mais avait du go\u00fbt. Il \u00e9tait grand amateur de potages, notamment de nids d\u2019hirondelles ou de soupe \u00e0 la tortue, un chair rarissime que le chef lui d\u00e9nichait \u00e0 Londres. La soupe aux hu\u00eetres dont il donne la recette semble une merveille. Il y a aussi le Homard Orph\u00e9e, une palombe flamb\u00e9e que l\u2019on r\u00eave de go\u00fbter, des c\u00e8pes au citron et des coquilles Saint-Jacques que le chef conseille\u00a0<i>de mettre sur un plat en pyrex, \u00e0 four vif, sans rien. SANS RIEN\u00a0<\/i>!, insiste-t-il.\u00a0<i>Ni sel, ni poivre, ni huile, ni beurre, RIEN\u2026 Juste une noisette de beurre frais dans l\u2019assiette<\/i>. Des gens qui savaient. C\u2019\u00e9tait une \u00e9poque, \u00e9crit un confr\u00e8re, C\u2019\u00e9tait l\u2019\u00e9poque\u00a0<i>o\u00f9 l\u2019image de la cuisine pouvait \u00eatre savante sans \u00eatre p\u00e9dante, donner \u00e0 entrevoir le savoir d\u2019un chef sans le statufier dans le star-system qu\u2019est devenue la bouffe o\u00f9 cuisiniers, p\u00e2tissiers sont adul\u00e9s comme des footeux \u00e9toil\u00e9s<\/i>.
