Ce m\u00eame Brugmann que l\u2019on conna\u00eet mieux aujourd\u2019hui pour avoir donn\u00e9 son nom \u00e0 l\u2019un des h\u00f4pitaux les plus embl\u00e9matiques de la ville (dont l\u2019architecte n\u2019\u00e9tait autre que Victor Horta) ou encore \u00e0 la notoire avenue sur laquelle tr\u00f4ne ce bel h\u00f4tel particulier devenu, \u00e0 son tour, restaurant \u00e9ponyme.<\/p>\n<p style=\"text-align: justify;\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-5144\" src=\"http:\/\/www.life-magazine.be\/fr\/wp-content\/uploads\/2015\/07\/Blueclic-3-life-magazine.jpg\" alt=\"Blueclic-3---life-magazine\" width=\"600\" height=\"399\" srcset=\"https:\/\/www.fiftyandmemagazine.be\/fr\/wp-content\/uploads\/2015\/07\/Blueclic-3-life-magazine.jpg 600w, https:\/\/www.fiftyandmemagazine.be\/fr\/wp-content\/uploads\/2015\/07\/Blueclic-3-life-magazine-315x209.jpg 315w, https:\/\/www.fiftyandmemagazine.be\/fr\/wp-content\/uploads\/2015\/07\/Blueclic-3-life-magazine-450x300.jpg 450w\" sizes=\"auto, (max-width: 600px) 100vw, 600px\" \/><\/p>\n<p style=\"text-align: justify;\">Une maison de ma\u00eetre dont la magnifique terrasse \u00e0 l\u2019arri\u00e8re donne sur le petit Parc de l\u2019Abb\u00e9 Froidure (ancien jardin priv\u00e9 de la villa) et qui, pour la premi\u00e8re fois, ouvre ses portes au grand public en devenant restaurant. Son nouvel am\u00e9nagement sign\u00e9 par la d\u00e9coratrice d\u2019int\u00e9rieur Annie Mesmin est, \u00e0 nos yeux, une premi\u00e8re tr\u00e8s belle r\u00e9ussite. Seul le rez-de-chauss\u00e9e de la b\u00e2tisse \u00e9tant actuellement occup\u00e9 par le restaurant, celui-ci s\u2019ouvre sur un hall d\u2019entr\u00e9e aux superbes luminaires contemporains. A droite, un joli salon (<strong><em>Le Boudoir<\/em><\/strong>) restaur\u00e9 \u00e0 l\u2019identique et o\u00f9 l\u2019on aimerait \u00eatre d\u2019office dirig\u00e9 pour prendre l\u2019ap\u00e9ritif lorsque le temps ne permet pas d\u2019acc\u00e9der directement \u00e0 la terrasse. Avant celle-ci, le grand salon est la salle de restaurant principale sur laquelle donne la cuisine ouverte.\u00a0<strong><em>Le Grand Salon<\/em><\/strong>\u00a0est donc le c\u0153ur de la maison et sa d\u00e9coration est, elle aussi, tr\u00e8s r\u00e9ussie. Dommage que cette premi\u00e8re r\u00e9putation pr\u00e9c\u00e8de la qualit\u00e9 de la r\u00e9novation et m\u00eame et surtout, celle de la cuisine.<\/p>\n<p style=\"text-align: justify;\">Car de cuisine, il nous faut bien s\u00fbr parler maintenant. Une cuisine qui, elle aussi, pr\u00e9sente un nouveau (re)venu en Belgique, en la personne du chef belge,\u00a0<strong><em>Matthias Van Eenoo<\/em><\/strong>. D\u2019origines belges, ce jeune chef issu d\u2019une famille de restaurateurs affiche un parcours attrayant dans de grandes maisons fran\u00e7aises. Ainsi, il a travaill\u00e9 au<em>Lucas Carton<\/em>** \u00e0 Paris (<em>Alain Senderens<\/em>), au Relais &amp; Ch\u00e2teau\u00a0<em>Le Mas Candille<\/em>* \u00e0 Mougins (<em>Serge Gouloumes<\/em>) et \u00e0\u00a0<em>l\u2019Op\u00e9ra Garnier<\/em>** (<em>Yann Tanneau\u00a0<\/em>et\u00a0<em>Christophes Aribert<\/em>). De belles r\u00e9f\u00e9rences dont on retrouve de subtiles traces dans la carte et surtout dans les excellentes sauces du jeune chef.<\/p>\n<p style=\"text-align: justify;\">Agr\u00e9able, l\u00e9g\u00e8re, raffin\u00e9e et r\u00e9solument saisonni\u00e8re, la cuisine de\u00a0<em>Matthias Van Eenoo<\/em>\u00a0fait plaisir \u00e0 voir et \u00e0 go\u00fbter. Comme il se doit, le chef joue avec la saison en cours et changera sa carte \u00e0 chaque changement de celle-ci.<\/p>\n<p style=\"text-align: justify;\">\u00a0<img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-4974\" src=\"http:\/\/www.life-magazine.be\/fr\/wp-content\/uploads\/2015\/07\/Brugmann-8-life-magazine.jpg\" alt=\"Brugmann-8----life-magazine\" width=\"205\" height=\"306\" \/><\/p>\n<p style=\"text-align: justify;\">Pour l\u2019heure, il aura s\u00e9duit nos papilles avec, en mise en bouche, une raviole de foie gras et sa sauce \u00e0 l\u2019orange et aux fruits secs. Avec en premi\u00e8re entr\u00e9e, un vrai must, qui pourrait d\u00e9j\u00e0 faire office d\u2019entr\u00e9e signature, une langoustine croustillante au chou pak-shoi et sauce tha\u00ef.<\/p>\n<p style=\"text-align: justify;\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone  wp-image-4975\" src=\"http:\/\/www.life-magazine.be\/fr\/wp-content\/uploads\/2015\/07\/Brugmann-9-life-magazine.jpg\" alt=\"Brugmann-9---life-magazine\" width=\"213\" height=\"319\" srcset=\"https:\/\/www.fiftyandmemagazine.be\/fr\/wp-content\/uploads\/2015\/07\/Brugmann-9-life-magazine.jpg 350w, https:\/\/www.fiftyandmemagazine.be\/fr\/wp-content\/uploads\/2015\/07\/Brugmann-9-life-magazine-315x471.jpg 315w\" sizes=\"auto, (max-width: 213px) 100vw, 213px\" \/><\/p>\n<p style=\"text-align: justify;\">Tout aussi r\u00e9ussi, le saumon fum\u00e9 maison avec sa gaufre et son d\u00e9licieux sorbet au fenouil offrait un parfait rapport qualit\u00e9-prix (17 \u20ac) alors que le foie gras aux fraises et sirop d\u2019\u00e9rable est, quant \u00e0 lui, plus surprenant par cette singuli\u00e8re association m\u00eame si un rien trop sucr\u00e9 \u00e0 notre go\u00fbt.<\/p>\n<p style=\"text-align: justify;\">Rien \u00e0 redire quant \u00e0 la fra\u00eecheur ou \u00e0 la saveur du turbot r\u00f4ti car assez cr\u00e9atif lui aussi, il est ici accompagn\u00e9 d\u2019une subtile \u00e9mulsion de parmesan.
