Ajoutez 45 ml de Tanqueray n\u00b010, 30 ml de coulis de butternut, 15 ml de sirop de romarin, 15 ml de jus de citron fra\u00eechement press\u00e9, 15 ml de liqueur de Falernum et 1 doigt d\u2019Angostura dans le shaker. Secouez \u00e9nergiquement. Versez le cocktail dans un verre avec des gla\u00e7ons \u00e0 travers un tamis. Coupez le butternut dans le sens de la longueur et retirez toutes les graines. Saupoudrez le butternut de sel et d\u00e9posez-le t\u00eate en bas sur une plaque de cuisson. Faites cuire le butternut pendant une heure et demie, puis retirez toute la pulpe du butternut et r\u00e9duisez-la en pur\u00e9e. Mettez 230 g de sucre dans une casserole et faites chauffer \u00e0 feu moyen. Ne remuez pas, laissez caram\u00e9liser jusqu\u2019\u00e0 ce que le sucre devienne liquide. Versez 60 g de beurre non sal\u00e9 et remuez pour m\u00e9langer. Ajoutez 160 ml de cr\u00e8me \u00e9paisse et m\u00e9langez l\u2019ensemble en le retirant du feu. Ajoutez 300 g de pur\u00e9e de butternut, ainsi qu\u2019une cuill\u00e8re \u00e0 caf\u00e9 de sel. Ajoutez des gla\u00e7ons suppl\u00e9mentaires. Versez la ginger ale et tournez avec une cuill\u00e8re \u00e0 m\u00e9lange. Prenez votre th\u00e9 cha\u00ef pr\u00e9f\u00e9r\u00e9 et comptez un sachet de th\u00e9 pour 100 ml d\u2019eau bouillante. Laissez infuser pendant 10 \u00e0 15 minutes et passez l\u2019ensemble au tamis. Pesez la quantit\u00e9 de liquide restante et ajoutez le poids \u00e9quivalent en sucre tant que le liquide est chaud. Pendant ce temps, battez les jaunes d&rsquo;\u0153ufs avec la f\u00e9cule de ma\u00efs et le sucre dans un bol r\u00e9sistant \u00e0 la chaleur. \u00c9teignez la plaque de cuisson, retirez la gousse de vanille et versez le liquide chaud dans les jaunes d&rsquo;\u0153ufs en un mince filet tout en battant vigoureusement \u00e0 la main. Versez le tout dans la casserole et remettez \u00e0 chauffer \u00e0 feu doux.
