Une viande tendre et saine parfaite pour composer des repas festifs, sous la forme de gigot ou de carr\u00e9 d\u2019agneau. Avec l\u2019agneau irlandais \u00e0 la popularit\u00e9 av\u00e9r\u00e9e en Belgique, partenaire commercial de premier plan de l\u2019Irlande. Ce pays au b\u00e9tail \u00e9lev\u00e9 au grand air dans les verts p\u00e2turages et plac\u00e9 au centre de la campagne de promotion de Bord Bia, l\u2019agence alimentaire irlandaise. Une viande parfaite \u00e9galement pour composer rapidement un d\u00e9licieux repas familial. Comme en t\u00e9moigne notre recette pr\u00e9sent\u00e9e ci-dessous, avec des c\u00f4telettes d\u2019agneau bio aux petits l\u00e9gumes du jardin.\u00a0<\/span><\/p>\n<p><b>C\u00f4telettes d\u2019agneau bio aux l\u00e9gumes bio r\u00f4tis avec leur vinaigrette aux herbes<\/b><\/p>\n<p><span style=\"font-weight: 400;\">Pour 2 \u00e0 4 personnes\u00a0<\/span><\/p>\n<p><b>Ingr\u00e9dients principaux<\/b><span style=\"font-weight: 400;\">\u00a0:<\/span><\/p>\n<ul>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">8 c\u00f4telettes d\u2019agneau bio, bien nettoy\u00e9es<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">500 grammes de carottes bio, 500 grammes de pommes de terre bio et 500 grammes de courge butternut bio, pel\u00e9e et d\u00e9coup\u00e9e en petits cubes de 5 cm.<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">2 betteraves rouges bio, bien bross\u00e9es et coup\u00e9es en quartiers.<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">2 oignons bio, pel\u00e9s et coup\u00e9s en quartiers, mais avec la racine conserv\u00e9e.<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">2 cuill\u00e8res \u00e0 soupe d\u2019huile de colza ou d\u2019huile d\u2019olive.<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Sel et poivre noir fra\u00eechement moulu<\/span><\/li>\n<\/ul>\n<p><b>Pour la<\/b> <b>vinaigrette aux herbes<\/b><span style=\"font-weight: 400;\">\u00a0:<\/span><\/p>\n<ul>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">2 cuill\u00e8res \u00e0 soupe d\u2019huile d\u2019olive<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">20 grammes d\u2019herbes m\u00e9lang\u00e9es, finement hach\u00e9es. Que choisir\u00a0? Du persil, de la ciboulette, de la menthe ou du basilic.<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Jus d\u2019un demi citron<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Sel et poivre noir fra\u00eechement moulu.<\/span><\/li>\n<\/ul>\n<p><b>Pr\u00e9paration<\/b><span style=\"font-weight: 400;\">\u00a0:<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Pr\u00e9chauffez le four \u00e0 200 degr\u00e9s. La grillade constitue la meilleure cuisson pour la viande d\u2019agneau, \u00e0 servir ros\u00e9e ou \u00e0 point. Petite astuce, on ne retourne pas la viande avec une fourchette, au risque de perdre son jus et de l\u2019ass\u00e9cher.<\/span><\/p>\n<ul>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Premi\u00e8re \u00e9tape\u00a0: les l\u00e9gumes pr\u00e9par\u00e9s, les oignons et les betteraves rouges sont mis \u00e0 r\u00f4tir. L\u2019huile, le sel et le poivre sont ensuite saupoudr\u00e9s sur les l\u00e9gumes. Le plat est ensuite plac\u00e9 dans le four pr\u00e9chauff\u00e9 durant 20 \u00e0 30 minutes pour obtenir des l\u00e9gumes bien tendres.<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">La vinaigrette est ensuite pr\u00e9par\u00e9e dans un bol, bien m\u00e9lang\u00e9e et assaisonn\u00e9e selon les go\u00fbts de chacun.\u00a0<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Derni\u00e8re \u00e9tape\u00a0: la pr\u00e9paration des c\u00f4telettes. La viande est badigeonn\u00e9e d\u2019huile d\u2019olive puis assaisonn\u00e9e de sel et de poivre. Les c\u00f4telettes sont ensuite cuites de 3 \u00e0 4 minutes par c\u00f4t\u00e9 et retourn\u00e9es une seule fois.
