Ce moment de l\u2019ann\u00e9e id\u00e9al pour satisfaire ses envies \u00e9picuriennes autour d\u2019une joyeuse tabl\u00e9e. Et pour que la ma\u00eetresse de maison ne soit pas de service en ce jour particulier, place au menu Signature du restaurant gastronomique Brugmann\u00a0<\/span><\/p>\n<h2>Savourez No\u00ebl avec le menu Signature by Brugmann<\/h2>\n<p><span style=\"font-weight: 400;\">Fine et novatrice, la cuisine du restaurant gastronomique Brugmann revisite les traditionnels plats de f\u00eate. En t\u00e9moigne le menu Signature concoct\u00e9 par Matthias van Eenoo pour No\u00ebl. Un cadeau pour les gourmets en qu\u00eate de surprises mais sans omettre les ingr\u00e9dients typiques de No\u00ebl. <\/span><span style=\"font-weight: 400;\"><br \/>\n<\/span><span style=\"font-weight: 400;\"><br \/>\n<\/span><span style=\"font-weight: 400;\">Apr\u00e8s les amuse-bouche, le menu d\u00e9bute par un premier feu d\u2019artifice de saveurs avec cette petite touche de nostalgie intimement li\u00e9e \u00e0 No\u00ebl. Un velout\u00e9 de marron de son enfance, cappuccino de truffes et une raviole d\u2019\u00e9miett\u00e9 de chair de crabe, fine gel\u00e9e de betterave et cr\u00e8me de parmesan. Mais aussi un tatin de foie gras et de pommes boskoop flamb\u00e9es au Calvados et une langoustine bretonne mi-cuite, sabayon \u00ab\u00a0Arlequin au corail. Une premi\u00e8re salve de plaisirs de bouche referm\u00e9e sur le trou normand, un sorbet orange sanguine\/mandarine Napol\u00e9on. <\/span><\/p>\n<p><span style=\"font-weight: 400;\">Place ensuite au plat principal, avec deux choix possibles. Pourquoi ne pas se laisser tenter par ces coquilles St Jacques de Dieppe au barbecue, beurre blanc au citron caviar, bergamote, algue kombu\u00a0? A moins de pr\u00e9f\u00e9rer ce filet de biche, amandine de l\u2019\u00e9poisses et sauce Grand Veneur. <\/span><\/p>\n<p><span style=\"font-weight: 400;\">Pas de repas de f\u00eate sans un peu de fromage, avec cette s\u00e9lection de fromages AOC. Pr\u00e9ambule au pr\u00e9dessert, de la mangue \u00e9pic\u00e9e, espuma citron vert. Derni\u00e8re \u00e9tape gustative avant de cl\u00f4turer la d\u00e9couverte de ce menu Signature par l\u2019Op\u00e9ra du Brugmann, glace Baileys.
