Elle s\u2019installe \u00e0 bas bruit, et devient le terreau de nombreuses pathologies : diab\u00e8te, maladies cardiovasculaires, troubles digestifs, douleurs articulaires, voire d\u00e9pression et maladies neurod\u00e9g\u00e9n\u00e9ratives. L\u2019alimentation anti-inflammatoire n\u2019est pas une mode, c\u2019est une sagesse. Elle s\u2019inspire du bon sens ancestral et des d\u00e9couvertes modernes. C\u2019est une cuisine de couleurs, de fra\u00eecheur, de simplicit\u00e9.<\/p>\n<p class=\"\" data-start=\"1330\" data-end=\"1352\">Voici ses fondements :<\/p>\n<ul data-start=\"1354\" data-end=\"2154\">\n<li class=\"\" data-start=\"1354\" data-end=\"1585\">\n<p class=\"\" data-start=\"1356\" data-end=\"1585\"><strong data-start=\"1356\" data-end=\"1386\">Des l\u00e9gumes \u00e0 chaque repas<\/strong>, id\u00e9alement de toutes les couleurs. Car chaque pigment est un compos\u00e9 protecteur : lycop\u00e8ne des tomates, anthocyanes des fruits rouges, carot\u00e9no\u00efdes des carottes\u2026 Une v\u00e9ritable pharmacop\u00e9e v\u00e9g\u00e9tale.<\/p>\n<\/li>\n<li class=\"\" data-start=\"1589\" data-end=\"1755\">\n<p class=\"\" data-start=\"1591\" data-end=\"1755\"><strong data-start=\"1591\" data-end=\"1606\">Des om\u00e9ga-3<\/strong>, anti-inflammatoires reconnus. On les trouve dans les poissons gras (sardines, maquereaux, saumon sauvage), les graines de lin ou de chia, les noix.<\/p>\n<\/li>\n<li class=\"\" data-start=\"1757\" data-end=\"1932\">\n<p class=\"\" data-start=\"1759\" data-end=\"1932\"><strong data-start=\"1759\" data-end=\"1783\">Des herbes et \u00e9pices<\/strong> aux vertus apaisantes : curcuma, gingembre, ail, cannelle, romarin, thym\u2026 \u00c0 saupoudrer g\u00e9n\u00e9reusement dans vos plats comme des talismans protecteurs.<\/p>\n<\/li>\n<li class=\"\" data-start=\"1934\" data-end=\"2061\">\n<p class=\"\" data-start=\"1936\" data-end=\"2061\"><strong data-start=\"1936\" data-end=\"1956\">Des l\u00e9gumineuses<\/strong> (lentilles, pois chiches, haricots) riches en fibres et en antioxydants, qui r\u00e9gulent aussi la glyc\u00e9mie.<\/p>\n<\/li>\n<li class=\"\" data-start=\"2063\" data-end=\"2154\">\n<p class=\"\" data-start=\"2065\" data-end=\"2154\"><strong data-start=\"2065\" data-end=\"2091\">Des aliments ferment\u00e9s<\/strong>, qui soutiennent le microbiome, cl\u00e9 de la r\u00e9ponse immunitaire.<\/p>\n<\/li>\n<\/ul>\n<p class=\"\" data-start=\"2156\" data-end=\"2244\">\u00c0 l\u2019inverse, r\u00e9duire autant que possible certains aliments d\u00e9clencheurs d\u2019inflammation :<\/p>\n<ul data-start=\"2245\" data-end=\"2390\">\n<li class=\"\" data-start=\"2245\" data-end=\"2263\">\n<p class=\"\" data-start=\"2247\" data-end=\"2263\">sucres raffin\u00e9s,<\/p>\n<\/li>\n<li class=\"\" data-start=\"2264\" data-end=\"2293\">\n<p class=\"\" data-start=\"2266\" data-end=\"2293\">aliments ultra-transform\u00e9s,<\/p>\n<\/li>\n<li class=\"\" data-start=\"2294\" data-end=\"2336\">\n<p class=\"\" data-start=\"2296\" data-end=\"2336\">exc\u00e8s de viande rouge ou de charcuterie,<\/p>\n<\/li>\n<li class=\"\" data-start=\"2337\" data-end=\"2390\">\n<p class=\"\" data-start=\"2339\" data-end=\"2390\">exc\u00e8s d\u2019alcool ou de produits laitiers industriels.<\/p>\n<\/li>\n<\/ul>\n<p class=\"\" data-start=\"2392\" data-end=\"2508\">Il ne s\u2019agit pas d\u2019interdits rigides, mais d\u2019un art de cultiver ce qui fait du bien \u2014 au corps, au c\u0153ur, \u00e0 l\u2019humeur.<\/p>\n<p class=\"\" data-start=\"2510\" data-end=\"2732\">Dans votre cuisine, les anti-inflammatoires les plus puissants ne sont pas dans une bo\u00eete de pilules, mais dans une poign\u00e9e de myrtilles, une cuill\u00e8re d\u2019huile d\u2019olive vierge extra, une soupe de lentilles parfum\u00e9e au cumin.<\/p>\n<p class=\"\" data-start=\"2734\" data-end=\"2923\">En nourrissant votre corps avec soin, vous l\u2019aidez \u00e0 s\u2019apaiser, \u00e0 r\u00e9parer, \u00e0 retrouver de l\u2019\u00e9lan. Vieillir ne signifie pas forc\u00e9ment souffrir.
