Les mettre dans un bol avec la moutarde, l\u2019huile d\u2019olive, la fleur de sel et du poivre du moulin \u00e0 discr\u00e9tion. Emulsionner le tout puis passer au chinois.<\/p>\n<p style=\"text-align: justify;\"><strong>Couper la demi-mangue en brunoise<\/strong> et l\u2019ajouter \u00e0 la pr\u00e9paration \u00e9mulsionn\u00e9e. Couper finement le fenouil et y ajouter de l\u2019huile d\u2019olive, du poivre et du sel. D\u00e9couper en brunoise \u00e9galement le c\u00e9leri puis le blanchir. Laisser refroidir dans une eau avec des gla\u00e7ons. Une fois le c\u00e9leri refroidis, l\u2019\u00e9goutter et l\u2019essuyer.<\/p>\n<p style=\"text-align: justify;\"><strong>Laisser la soupe refroidir<\/strong> au frigo le temps du reste de la pr\u00e9paration du menu.<\/p>\n<p style=\"text-align: justify;\">Apr\u00e8s minimum 1 h au frais, retirer la soupe du frigo et la <strong>verser dans de jolies assiettes creuses<\/strong> ou dans des verrines. La garnir ensuite avec la brunoise de c\u00e9leri ce qui lui apportera de la fra\u00eecheur.<\/p>\n<p style=\"text-align: justify;\"><span style=\"color: #ff6600;\"><strong>Conseils de Giovanni\u00a0<\/strong><\/span>\u00a0Vous pouvez \u00e9galement ajouter quelques framboises en garniture. Celles-ci apporteront de la fra\u00eecheur ainsi qu\u2019une touche d\u2019aigreur qui sera appr\u00e9ci\u00e9e par forte chaleur ext\u00e9rieure. Cette soupe \u00e0 servir tr\u00e8s fra\u00eeche pourra alors \u00eatre d\u00e9gust\u00e9e avec des bulles\u00a0! Un excellent Prosecco fera l\u2019affaire surtout s\u2019il est bien choisi comme celui que propose le Senzanome en ap\u00e9ritif, le Prosecco D.O.C.
