Une belle enseigne\u00a0qui, gr\u00e2ce \u00e0 ses\u00a0nouveaux propri\u00e9taires, aura \u00e9t\u00e9 totalement et tr\u00e8s agr\u00e9ablement\u00a0transform\u00e9e. Une transformation sign\u00e9e par l\u2019architecte d\u2019int\u00e9rieur\u00a0<strong><em>Olivier Berghmans<\/em>\u00a0<\/strong>\u00e0\u00a0qui l\u2019on doit \u00e9galement le bel am\u00e9nagement du Bois Savane, du Belgo Belge ou encore qui est devenu, depuis 2013, le brand designer des Brasseries Haacht (partenaire des Ma\u00eetres Cuisiniers de Belgique).<\/p>\n<p style=\"text-align: justify;\"><a href=\"http:\/\/www.life-magazine.be\/fr\/wp-content\/uploads\/2015\/09\/Via-Novi-5.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-7316\" src=\"http:\/\/www.life-magazine.be\/fr\/wp-content\/uploads\/2015\/09\/Via-Novi-5.jpg\" alt=\"Via Novi (5)\" width=\"640\" height=\"427\" srcset=\"https:\/\/www.fiftyandmemagazine.be\/fr\/wp-content\/uploads\/2015\/09\/Via-Novi-5.jpg 640w, https:\/\/www.fiftyandmemagazine.be\/fr\/wp-content\/uploads\/2015\/09\/Via-Novi-5-315x210.jpg 315w, https:\/\/www.fiftyandmemagazine.be\/fr\/wp-content\/uploads\/2015\/09\/Via-Novi-5-450x300.jpg 450w\" sizes=\"auto, (max-width: 640px) 100vw, 640px\" \/><\/a><\/p>\n<p style=\"text-align: justify;\">Ainsi, une fois l\u2019enseigne reprise, apr\u00e8s de lourds travaux et une parfaite mise aux couleurs de la Grande Botte d\u2019hier et d\u2019aujourd\u2019hui, l\u2019aventure men\u00e9e par Olivier et Adriana a rapidement fait des \u00e9mules avec ces clients fid\u00e8les et d\u00e9j\u00e0 tr\u00e8s nombreux. Alors qu\u2019au d\u00e9but, il officiait en salle \u00e0 l\u2019orchestration des vins, Olivier reprit quelques mois plus tard les rennes de la cuisine. Ceci car notre propri\u00e9taire, musicologue de formation et italien d\u2019adoption, en v\u00e9ritable homme-orchestre, sait y faire autant c\u00f4t\u00e9 cave que c\u00f4t\u00e9 fourneaux. Il faut dire qu\u2019il a \u00e9t\u00e9 rod\u00e9 \u00e0 de belles maisons de bouche (Truffe noire, Souvereyns, Petit-Fils) avant de reprendre cette enseigne o\u00f9 d\u00e9sormais il s\u2019active au fourneau alors que sa douce moiti\u00e9 se pr\u00e9occupe, avec grande hospitalit\u00e9, de la salle. Bon sang ne saurait mentir puisque nous sommes ici chez la fille et le beau-fils de Luigi Ciciriello de la c\u00e9l\u00e8bre Truffe Noire\u00a0!<\/p>\n<p style=\"text-align: justify;\"><a href=\"http:\/\/www.life-magazine.be\/fr\/wp-content\/uploads\/2015\/09\/Figue-4.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-7317\" src=\"http:\/\/www.life-magazine.be\/fr\/wp-content\/uploads\/2015\/09\/Figue-4.jpg\" alt=\"Figue-4\" width=\"640\" height=\"428\" srcset=\"https:\/\/www.fiftyandmemagazine.be\/fr\/wp-content\/uploads\/2015\/09\/Figue-4.jpg 640w, https:\/\/www.fiftyandmemagazine.be\/fr\/wp-content\/uploads\/2015\/09\/Figue-4-315x211.jpg 315w, https:\/\/www.fiftyandmemagazine.be\/fr\/wp-content\/uploads\/2015\/09\/Figue-4-450x300.jpg 450w\" sizes=\"auto, (max-width: 640px) 100vw, 640px\" \/><\/a><\/p>\n<p style=\"text-align: justify;\">C\u00f4t\u00e9 cuisine, au Via Novi, celle-ci se fait r\u00e9solument italienne. Ax\u00e9e sur de grands classiques en mati\u00e8re de produits provenant de la Grande Botte et dot\u00e9e d\u2019une pinc\u00e9e de cr\u00e9ativit\u00e9 et d\u2019une poign\u00e9e de bon sens\u00a0; une cuisine qui met parfaitement le produit en exergue \u00e0 chaque plat sans aucune h\u00e9sitation. Le r\u00e9sultat est rafra\u00eechissant et l\u2019on comprend vite qu\u2019ici, le spaghetti bolo n\u2019aura pas vraiment droit de s\u00e9jour. La cave, elle aussi, issue de la p\u00e9ninsule, rec\u00e8le de petits tr\u00e9sors parfaitement en ad\u00e9quation avec les plats, quand on a la bonne id\u00e9e de se laisser conseiller par le sommelier.\u00a0<a href=\"http:\/\/www.joellerochette.com\/wp-content\/uploads\/2015\/09\/Terrasse.jpg\"><br \/>\n<\/a><\/p>\n<p style=\"text-align: justify;\">Changeant chaque saison, la carte joue sur les produits du moment gr\u00e2ce \u00e0 ce que l\u2019Italie offre de mieux pour proposer un choix, par exemple, entre une mortadelle aux pistaches\u00a0; un assortiment de charcuterie et fromage italiens\u00a0; le fameux carpaccio de b\u0153uf \u00e0 la Luigi (mais oui, la truffe est ici aussi en vedette\u00a0!)\u00a0ou encore et entre autre, la caille aux artichauts. Le menu du mois (35 \u20ac \u2013 45 avec vins\/3 services &amp; 45 \u20ac les 4 services), propose un mille-feuille croustillant de Bufala avec son \u00e9cume de tomate\u00a0; des ravioles de scampi sauvages aux bettes\u00a0; un filet pur de porc, \u00e9chalotes confits et jus au Marsala et, en dessert, la d\u00e9licieuse figue fra\u00eeche r\u00f4tie au miel et romarin que notre chef du mois, \u00e0 savoir Olivier Broucke, vous propose en recette et dont nous vous conseillons la \u2013 tr\u00e8s facile \u2013 pr\u00e9paration \u00e0 la maison\u00a0;
