A vous de jouer\u00a0maintenant, \u00e0 moins que vous pr\u00e9f\u00e9riez d\u00e9guster ce d\u00e9lice au Restaurant Alexandre (Bruxelles) !<\/p>\n<h2 style=\"text-align: justify;\"><span style=\"color: #ff6600;\">Faon au chou de Savoie:<\/span><\/h2>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-9954 \" src=\"http:\/\/www.life-magazine.be\/fr\/wp-content\/uploads\/2015\/12\/retouche.jpg\" alt=\"life-magazine\" width=\"379\" height=\"503\" srcset=\"https:\/\/www.fiftyandmemagazine.be\/fr\/wp-content\/uploads\/2015\/12\/retouche.jpg 428w, https:\/\/www.fiftyandmemagazine.be\/fr\/wp-content\/uploads\/2015\/12\/retouche-315x418.jpg 315w\" sizes=\"auto, (max-width: 379px) 100vw, 379px\" \/><\/p>\n<p style=\"text-align: justify;\"><span style=\"color: #333333;\"><strong>Ingr\u00e9dients<\/strong>:\u00a0<\/span>750 g de filet de faon, 300 g de champignons des bois ( girolles, chanterelles, trompettes), 300 g de chou de Savoie, 150 g de polenta ( pr\u00e9cuite), 65 cl de lait, 20 g de beurre doux, 20 g de parmesan r\u00e2p\u00e9, 60 cl de fond de gibier, 150 g de m\u00fbres, 30 g de sucre, 2 cs de vinaigre de vin rouge, 5 cl de Banyuls, des zestes d\u2019oranges, 1 orange, 1\/2 b\u00e2ton de cannelle, 60 g de beurre froid coup\u00e9 en d\u00e9s, sel, poivre.<\/p>\n<p style=\"text-align: justify;\"><span style=\"color: #333333;\"><strong>Pr\u00e9paration<\/strong><\/span>\u00a0: Nettoyer les champignons des bois en les brossant. Ne surtout pas les passer \u00e0 l\u2019eau. Emincer finement le chou de Savoie. Le d\u00e9tailler en rondelles \u00e0 l\u2019emporte-pi\u00e8ce puis les frire pour les utiliser en d\u00e9coration. Polenta : faire bouillir le lait puis y ajouter la polenta en pluie. Cuire ensuite \u00e0 feu moyen durant 3 minutes en remuant. Ajouter le parmesan et les d\u00e9s de beurre. Saler, poivrer. R\u00e9server sur une plaque de 2 cm d\u2019\u00e9paisseur. Recouvrir et r\u00e9server. Sauce gibier : chauffer les m\u00fbres et le sucre jusqu\u2019\u00e0 l\u2019obtention d\u2019une pur\u00e9e. Hors du feu, ajouter le vinaigre de vin rouge et le fond de gibier. Puis les zestes d\u2019orange et le \u00bd b\u00e2ton de cannelle. Porter \u00e0 \u00e9bullition, puis laisser cuire \u00e0 feu doux durant 25 minutes. Ajouter le Banuyls et cuire 5 minutes. Passer au chinois. Colorer le filet de faon dans une po\u00eale puis mettre au four pendant quelques minutes. Sortir la viande et la laisser reposer. Pendant ce temps, po\u00ealer les champignons des bois et le chou de Savoie. A part, d\u00e9tailler \u00e0 l\u2019emporte-pi\u00e8ce la polenta et la colorer au beurre clarifi\u00e9. Dresser harmonieusement la viande, le chou et les champignons des bois, la pur\u00e9e de butternut, les chips de chou.
