Applaus verzekerd.<\/strong><\/p>\n<p style=\"text-align: justify;\"><em><span style=\"color: #333333;\">Vo<\/span>or 4 personen<\/em><br \/>\n<em> Bereidingstijd: 50 minuten &#8211; 100 calorie\u00ebn per persoon<\/em><\/p>\n<h3 style=\"text-align: justify;\"><strong>INGREDI\u00cbNTEN<\/strong><\/h3>\n<ul style=\"text-align: justify;\">\n<li>200 g zorgvuldig geschilde knolselder<\/li>\n<li>1 blaadje gelatine<\/li>\n<li>10 cl halfvolle melk<\/li>\n<li>80 g opgeklopte room<\/li>\n<li>40 g eiwitten (1 groot ei)<\/li>\n<li>Peper, zout<\/li>\n<\/ul>\n<h3 style=\"text-align: justify;\"><strong>Voor de truffelsabayon<\/strong><\/h3>\n<ul style=\"text-align: justify;\">\n<li>\u00bd rauw eigeel<\/li>\n<li>1 koffielepel sap van truffel<\/li>\n<li>1 koffielepel Xeres azijn<\/li>\n<li>10 g gehakte zwarte truffel (eventueel te vervangen door fijngehakte kruiden)<\/li>\n<li>2 soeplepels lichte vinaigrette<\/li>\n<li>Peper, zout<\/li>\n<\/ul>\n<h3 style=\"text-align: justify;\"><strong>Voor de krokante groenten<\/strong><\/h3>\n<ul style=\"text-align: justify;\">\n<li>1 wortel<\/li>\n<li>\u00bd tak selderij<\/li>\n<li>2 groene asperges<\/li>\n<li>2 radijzen<\/li>\n<\/ul>\n<h3 style=\"text-align: justify;\"><strong>BEREIDING <\/strong><\/h3>\n<ol style=\"text-align: justify;\">\n<li><strong>Mousse van\u00a0selderij<br \/>\n<\/strong>Versnijd de knolselder tot blokjes van 1 tot 2 cm. Gedurende 20 tot 25 minuten laten koken in een stoompot. Mixen tot een smeu\u00efge puree. Laten rusten in een kom. Laat het blaadje gelatine in een kom met koud water weken om te verzachten en te laten zwellen.<br \/>\nIn een kom brengt u de halfvolle melk aan de kook. Op smaak brengen met peper en zout. Van het vuur halen en de zachte gelatine toevoegen om te laten smelten. Deze mix toevoegen aan de selderijpuree en laten afkoelen.<br \/>\n<span style=\"line-height: 1.71429; font-size: 1rem;\">Klop de room op in een kom. Toevoegen aan de selderijpuree. De eiwitten opkloppen tot sneeuw en voorzichtig aan het geheel toevoegen. Indien nodig bijkruiden. De bereiding uitgieten in diepe borden. In de koelkast laten rusten zodat de gelatine zijn werk kan doen.<\/span><\/li>\n<\/ol>\n<ol style=\"text-align: justify;\" start=\"2\">\n<li><strong> Groenten<br \/>\n<\/strong>De wortel en de selderij versnijden tot staafjes van 5 mm dik en 5 cm lang.<br \/>\nMet een dunschiller snijdt u dunne reepjes van de groene asperges en radijzen.
